
I went into Siboire Saint-Vallier on rue Saint-Vallier Ouest and almost immediately started looking at the walls. The place has an elaborate bicycle theme, with wheels and tires mounted against old brick. It is the sort of decoration that could easily have been overdone, but I found myself enjoying the details. In the back, especially, there is plenty to look at.
There is good music, the atmosphere feels comfortable, and I found it easy to get by in English. That last point matters for visitors who want to explore somewhere beyond the usual Old Quebec stops without worrying about how to order a drink. You are still in a distinctively local neighborhood, but it is an approachable place to settle in for a while.
Bicycles, brick and a bit of Quebec wordplay
The bicycle decorations are the first thing I would mention to someone considering a visit. These are not just little pictures of bikes hung in a row. Wheels, tires and other cycling touches are worked into the room, and the exposed-brick backdrop gives them character. It makes for a fun photograph, but it also gives the bar some personality.
Even the name offers something to talk about. “Siboire” has the sound of a familiar Quebec French exclamation related to “ciboire,” one of the province’s traditional religious-derived swear words. To my ear there is also a pleasing little “si boire” — “if drinking” — joke in there. Siboire itself plays with that phrasing on its website. You need not know any Quebec French to enjoy a cider, but the wordplay adds a bit of local flavor.
The Saint-Vallier location opened in July 2024 in a heritage building that once housed Quebec’s first liquor commission, according to the brewery. The old brick and new-looking interior touches make a nice combination. This is a newer Siboire location in a building with a longer history, rather than an entirely new building pretending to look old.
Why bicycles are part of Siboire’s story
Siboire actually began in Sherbrooke, not Quebec City. Childhood friends Jonathan Gaudreault and Pierre-Olivier Boily developed the brewery together, opening Siboire Dépôt in a former railway station in November 2007. They went on to open another Sherbrooke location, and Siboire Saint-Laurent in Montreal followed in May 2017. By the time the Saint-Vallier address opened in July 2024, the business had two pubs in Sherbrooke and two in Montreal as well.
That cycling décor is more personal than it first appears. Boily was a high-level cyclist who served as a tandem pilot for blind and visually impaired riders, including at the Athens 2004 and Beijing 2008 Paralympic Games. On a racing tandem, the sighted pilot rides up front, working with the visually impaired athlete behind. Boily was a Paralympic participant in that role, not the coach of the entire team. The Fédération québécoise des sports cyclistes also lists him as its road and track director. Knowing that history, the wheels on the wall feel less like a decorating idea and more like part of the founders’ personalities.
The story has even reached France. Siboire Pyrénées opened in May 2026 in Estaing, in the Hautes-Pyrénées, through a collaboration between the Sherbrooke brewery and partners already based in the valley. Its mountain setting makes sense for a business whose founders love cycling, and it gives Siboire a rather unusual connection between a Quebec neighborhood pub and one of France’s celebrated cycling regions.
A pub menu that could make this a dinner stop
The other surprise was the food menu. I expected something fairly simple from a microbrewery, perhaps a few things to share with a drink. Instead, there is a substantial selection that makes it perfectly reasonable to come here for dinner. It changes how I would plan a visit: this could be a meal, rather than merely a stop before going somewhere else to eat.
On the restaurant’s current posted menu, choices include several fish preparations, beef and salmon tartares, poutine, and a beet-kefta sandwich on naan. There are also more familiar bar-friendly options. That is a broader menu than the usual beer-and-fries expectation. I am talking about the range of options, not claiming I sampled every dish. Check the current menu if a particular item is the reason for your visit.
I was also happy to find cider on tap during my stop. At a brewery, beer naturally gets the attention, but not everyone wants beer every time. A draft cider is a welcome alternative, and one more reason this works for a mixed group. Ask what is being poured when you visit, since the tap selection can change.
Saint-Vallier is becoming easier to explore on foot
Part of what appeals to me about Siboire Saint-Vallier is where it sits. Rue Saint-Vallier Ouest runs through Saint-Sauveur, a neighborhood worth exploring at a slower pace. This is a good excuse to walk a few blocks and see something of Quebec City outside the streets that most short-stay visitors already know.
The street itself has been undergoing a major redesign. Quebec City’s Saint-Vallier Ouest improvement plan includes wider sidewalks, landscaping, street furniture and changes meant to make it friendlier to pedestrians. I like that direction. On the completed stretches, the wider pedestrian space can make it more pleasant to wander, including when you are pushing a stroller. But the project runs through 2026, so do not assume that every block is finished or free of construction on the day you arrive.

Would I come back in summer?
Yes, particularly to see the outdoor terrace. The brewery describes a green terrace at this location, and I can imagine it being a lovely place to linger in warm weather after wandering Saint-Sauveur. That is a return-visit idea, not a claim that I have already spent a summer afternoon out there. According to the brewery, terrace tables are first come, first served rather than reservable, so it is worth checking the details before making plans around them.
