Raise a Glass to the Vieux Carré: Quebec City’s Newest Cocktail Haven

Quebec City’s vibrant culinary scene is about to welcome a new star. On May 23rd, Vieux Carré, the latest cocktail bar from Groupe la Tanière, will officially open its doors. Situated at 36 ½ St-Pierre street, this intimate establishment is a neighbor to two of its sister restaurants, Légende and l’Orygine. With a cozy indoor space that accommodates up to 20 guests and a stunning summer terrace offering panoramic views of Place de Paris and the St. Lawrence River, Vieux Carré is poised to become the city’s new favorite haunt.

An Inviting Atmosphere

Tucked away near Place Royale and Petit Champlain, Vieux Carré promises a warm and welcoming ambiance. Open from Thursday to Sunday starting at 4 p.m. until June 24th, the bar will expand its hours to Tuesday through Sunday from 1 p.m. onwards, staying open until 1 a.m. This new hotspot offers a perfect retreat for both pre-dinner cocktails and late-night drinks, complementing the dining experience at Groupe la Tanière’s other locations.

Craft Cocktails and Delectable Dishes

The cocktail menu at Vieux Carré is nothing short of impressive. Featuring 20 signature cocktails and mocktails, each creation is the brainchild of a talented team of bartenders. The selection is rich with local spirits, beers, and ciders, reflecting a commitment to Quebec’s artisanal beverage scene. Under the guidance of Philippe Veilleux, dining room director and co-owner of Orygine, the bar emphasizes the art of classic cocktails with meticulous attention to detail and a local twist.

Foodies will also find much to love. Chef Sabrina Lemay, co-owner of Orygine, has crafted a menu of shareable dishes that are both fresh and flavorful. From oysters and tartare to a delicious Cubano sandwich, the offerings are designed to complement the cocktail experience perfectly.

The name “Vieux Carré” pays homage to both a classic Louisiana cocktail and the historic square of Place de Paris. This bar is a tribute to the rich history and heritage of Nouvelle-France, while also embracing a contemporary and creative approach to hospitality.
